On 01/18/2022, I underwent an upper endoscopy that confirmed a unique diagnosis of Eosinophilic Esophagitis (EoE). Ironically, this was the first day of my graduate degree program. Little did I know that diagnosis would change my life in so many positive ways (just like the ADL program did). Since the testing that led to my diagnosis, I was already following an autoimmune protocol elimination diet. I spent the first month following medical advice by taking a liquid steroid slurry before asking the medical professionals for alternative options. I was told that many patients continue the medications forever, but some opt to eliminate eggs, wheat, dairy, and legumes. Ever up for self-educating and accepting a challenge, I boldly started my new lifestyle. Here I am today, still following that same simple plan of eliminating these four food groups (note: these things are in EVERYTHING).

As a bonus side effect, I immediately dropped around 50 pounds without even trying. I am excited to say that at the conclusion of my graduate program, I am down 108 pounds from my highest weight during the pandemic (I mean, we all thought we were going to die. I thought I was just living my best life).


Hobbies

In August 2019, after 12 years of marriage, my husband and I purchased 11+ acres. We started racking up the mileage again, commuting one and a half hours (one way) each workday! We are slowly developing the property with homesteading hopes and retirement dreams.

In May 2022 (just a few months after beginning the ADL program), my dream of owning goats (our reason for moving to the country) came true!

Meet Don Quix-goat-e, Dulcinea, and Sancho Panza named by my husband based upon Don Quixote.

Now, these sweet little babies are pushing two years old, and they are gigantic! They definitely do not fit in a dog crate anymore. They are still my happy place and spent many afternoons grazing along side me as I completed readings enjoying the sunshine in a pasture with them.
